Vanilla Recipe Wedding Cake

2 1/2 cups all purpose flour

2 cups sugar

1/2 teaspoon baking power

1/2 teaspoon baking soda

1 cup buttermilk or sour milk

1/2 cup shorting, margarine, or butter

1 teaspoon vanilla

4 egg whites

Combine flour, sugar, baking power and baking soda in a bowl.

Add the buttermilk, shortening and vanilla to the mixture.

Beat with an electric mixer on low  for about two minutes.

Scrape the side of the bowl and mix with the mixer in two minute interval until the batter is completely mixed.

Add egg whites and mix for another two to four minutes.

Pour the batter into two greased and floured 9 x 1/12 inch round baking pans.

Bake in a 350° oven for 30 minutes or until a toothpick inserts near the center of the cake comes out clean.

Cool the cake on cooling rack for about 15 minutes.

Your cake will serve 12 people.

Chocolate Recipe Wedding Cake

2 cups all purpose flour

2 cups sugar

1 teaspoon baking power

1 teaspoon baking soda

1/4 teaspoon salt

1 1/2 cups water

1/2 cup shorting, margarine or butter

1 teaspoon vanilla

2 eggs

3 squares (3 ounces) unsweetened chocolate, melted and cooled

Combine flour, sugar, baking powder, baking soda and salt in a bowl.

Add water, shorting and vanilla to the mixture.

Beat with an electric mixer on low until combined.

Beat on high speed in two minute intervals. Scrap the side of the bowl in between the intervals.

Add eggs and melted chocolate. Beat with mixer for two to four minutes or until combined.

Pour the batter into two greased and floured 9 x 1/12 inch round baking pans.

Bake in a 350° oven for 30 minutes or until a toothpick inserts near the center of the cake comes out clean.

Cool the cake on cooling rack for about 15 minutes.
